How to cook Moin Moin (Moi Moi)

1.Get some peeled black eyed beans. One cup serves 3.

3.Some fresh pepper(depending on how hot you want your bean cake).

4.Some clean water (out of which you will boil some for mixing)

5.Some oil will be needed for mixing(either the palm oil or the normal oil:vegetable oil,groundnut oil etc.)

6.Some salt .

7.some fish or egg or corned beef, or whatever you will like to garnish you moin- moin with.

8.some containers(in africa we use the wide leaves to wrap the mixture before placing it in a large pot that is already on fire with water boiling.

But in case you can not get the leaves then look for some containers of foods that you have used in the past .Medium size container ,either plastic or tin container that will on the mixture and at the same time withstand the heat of the water.

Soak the beans in water for at least 7 minutes ,wash the beans removing all the covering(skin) on the beans till you get the white part of the beans.Grind the beans with the onions and pepper until it is smooth.Place a pot on the burner, add 2 cups of water in it and heat.,while the water is heating up mix your bean mixture with a turner,add some oil to the mixture, season the mixture, then garnish the mixture with any of the above mentioned garnishing foods or agents then use a spoon (either a table spoon or the kitchen spoon depending on how big you want it). Scoop the mixture into the the container at least to the middle and place the conatainer in the pot on fire while the water is boiling(put some oil in the container to coat it so as to make for easy removal of the moin-moin when it is done).Leave it on fire fore between 30minutes to 1hr,remove it and place the content in a plate for eating
